Meal prep isn't for everyone. Some people don't like eating leftovers, others need more variety, and still others don't like cooking for long periods of time.
For me, cooking is an art form, and I love finding new ways to use what's in my cabinets. Meal prep can be an act of self care. I'm doing my future self a sweet favor, by having something quick, easy, and delicious, ready for when I need it.
First, I threw 1/2 the chicken in a ranch marinade and the other 1/2 in a balsamic spicy mustard mix.
Then got the rice started
Next, I tossed together a mushroom meat loaf and put it in the oven.
While I was waiting for the rice, I used different combos of paprika, salt, pepper, lemon, and garlic to vary my snap peas, broccoli, asparagus, and mushroom.
When the rice was finished, it was time to boil then mash the potatoes.
And wa-la! Six meals ready to freeze or eat ❤️
